June is Pride AND Peace Coffee's birthday month which means the return of our always fabulous Party Animal. This year we're celebrating with a new, fresh Sumatran semi-washed harvest from the Permata Gayo Co-op. It's ripe with lush tropical fruit, an earthiness giving way to fresh cedar, and savory and herbal presenting more like floral jasmine that is wonderfully fruity, surprising and delightful in so many ways. Only available for a short time and in limited quantities - so make sure you don’t miss the party!
What is semi-washed or wet-hulled coffee?
The semi-washed process, also referred to as wet-hulled process, shares similarities with the more common washed process, the key difference being that in the semi-washed process, the parchment layer is removed before the coffee is fully dried. While washed coffee is typically milled once it reaches a moisture content close to the final target of 10 to 12%, the parchment on semi-washed coffee is milled at 25 to 35%, and then dried to its final moisture content. This unique processing almost exclusively used in Indonesia is thought to be responsible for Sumatran coffee's proclivity toward earthy, spicy, savory, and herbal notes.
