Karla Portillo is a third-generation coffee farmer from the COSMA Cooperative in Honduras, whose coffee we love! For this year’s micro-lot, we’re showcasing Karla’s honey processed coffee, overflowing with juicy notes of orange, pomegranate, and hibiscus and subtle hints of black tea and anise. Karla pays meticulous attention to detail and always uses the best processing techniques to ensure the highest quality coffee! Enjoy this one-of-a-kind coffee courtesy of Karla.

What is Honey Processed Coffee?

The honey process begins with the harvest, selecting cherries during their optimal ripeness. The skin is removed from the coffee cherries, but some pulp is left on the parchment to dry.  This process results in unique qualities and different flavor characteristics, often very fruit-forward, and can reduce the amount of water needed for processing.

 

Roast: Light

Body: thick

Acidity: complex

Aroma: honeysuckle, vanilla, toasted almond

Tasting Notes: pomegranate, dried apricot, black tea, anise, milk chocolate
