In the summer of 2012, our roasting team began conducting some curious experiments in our coffee lab. Roasting coffee is a delicate art that is rarely without variance. Our roasters tend to the meticulous details each time they drop a batch into the drum, and sometimes minor differences in a roast can spark ideas of new possibilities. Equal parts craft and science, we keep our coffee roasting alchemists busy by asking them to think about these coffees in new ways. They take unique, seasonal coffees from one of our farmer-partner cooperatives and use their skills to craft new and exciting flavors from each batch. Inspiration can come from the season, the weather, the music, or even their diets.
