White Mocha Cookies

A recipe from our friends at Open Arms of Minnesota, celebrating 35 years of providing nutritious meals!! The bakers crafted this cookie recipe using our coffee and they are a huge hit for the clients that receive them with their meals.

What You Need

  • 1.5 cups (2.5 sticks) Butter
  • 1 & 2/3 cups Granulated Sugar
  • 1/2 cup Brown Sugar
  • 3 Eggs
  • 45 grams Coffee, ground (1.5 tbps.)
  • 1 tsp. Vanilla
  • 3 1/2 cups All Purpose Flour
  • 3/4 cup Cocoa Powder
  • 1 1/2 tsp. Baking Soda
  • 1 tsp. Salt
  • 2 cupsWhite Chocolate Chips

How to Make It

  1. Preheat oven to 350 degrees.
  2. Grind coffee in a blender until it becomes a very fine powder (or grind for espresso).
  3. Cream together butter and both sugars.
  4. Add eggs, one at a time, while mixing until incorporated.
  5. Add Vanilla.
  6. Mix dry ingredients together and add into butter mixture. Mix until combined and stir in chocolate chips.
  7. Bake 11 minutes or until just set.
