Amaretti syrup

We start by caramelizing brown sugar to create a syrup that’s deep and full of butterscotch notes. Pure almond extract is added at the end of the syrup making process to give a flavor that mimics the great orgeats of Rome. In the shop, we add the syrup to steamed fresh milk and serve in its form to highlight the flavor of the syrup. It’s also quite delicious prepared as a latte with espresso.


you will need

  • 675 grams (3 cups) brown sugar
  • 2 cups boiling water
  • 2 fluid ounces pure almond extract

how to make it

  1. Add the brown sugar to a dry pan over high heat and watch until sugar starts to melt on the bottom of the pan
  2. Stir until sugar is melted fully
  3. Add 2 cups of water slowly to pot, the mixture will bubble and steam. Stir with a whisk (it’s possible the mix will seize up, but stick with it, eventually it will melt together) and simmer for 10 minutes
  4. Remove from heat and add pure almond extract while stirring
  5. Let cool and pour into you desired vessel

build an autumn amaretti latte

  • For an 8 oz drink, add 20 grams of syrup to milk of your choice and steam or heat on the stovetop
  • For a 12 oz drink, add 30 grams of syrup to milk of your choice and steam of heat on the stovetop
  • Add 2 oz of prepared espresso to any drink to make it a latte
