Dominican
Returns!

This
is our second year with a limited time offering of
a coffee from El Polo Cooperative a member of
Fedecares in the Dominican Republic. After some
great feedback from customers and an enthusiastic
response from the staff here at Peace Coffee, we
decided to have it back again. This coffee
survived the impact of Hurricane Noel during the
peak of harvest season late last October. Island
coffee is a completely different ballgame when it
comes to roasting coffee. Typically a lower grown
bean, this translates to it being less dense, or
softer, and therefore influences how we can roast
the bean. We take it easy in the beginning and
then gradually add heat throughout the roast,
before taking it all away to have an even slow
ending. This process results in a sublime well
balanced cup of coffee.

The
El Polo beans are also now making an appearance in
the Twin Cities Blend. Adding Dominican to the
Twin Cities Blend is less about changing the blend
and more about enhancing it, making the body rich
and creamy and giving the flavors a balanced
combination of dark and milk chocolate, with hints
of smoke and walnut.
