Selection of the Month: Ethiopian

It’s come to that time of the winter when my morning cup of coffee has become absolutely essential to my well being. Knowing that the days are getting longer is not enough. It’s been months now that I’ve been greeted by pitch darkness as I head out the door for my daily bike ride to work. Within the hour I watch the sunrise out of our roastery’s windows while waiting for the roaster to warm up. The tastes and aromas coming from the cup of coffee in my hands awaken all my senses, providing the energy that’s lacking during this season suited for hibernating.
Now when it comes to choosing which coffee is going to get my day going I have the luxury of picking from all our selections (one of the joys of working at a roastery). The overwhelming winner has to be our Ethiopian — bright, complex and sweet with a rounded winy acidity that’s heaven to my sleepy taste buds. Heavy and dark our Ethiopian is not. While I almost never drink dark roasts, I usually reserve coffee selections with heavier qualities for after a big meal. For a pleasant, uplifting morning experience I stick to Ethiopian. Not that our Ethiopian is a wimpy coffee. On the contrary, the spicy complexity is enough to blow your mind. This coffee is proof that a well developed light roast will out smart a French Roast any ol’ day. And on long winter days like these, my brain needs all the stimulus is can get.
