Coffee Pairing
by TJ Semanchin, Peace Coffee Roaster Extraordinaire

The Birchwood Breakfast Blend was our first blend and is still our best selling, and for good reason. While this coffee is an all around crowd pleaser, the best way to enjoy it is with a tasty breakfast. Ideally you would head over to the Seward neighborhood of Minneapolis to this coffee’s namesake, the Birchwood Café. The laid back, inviting décor of this dairy-turned-café is plenty to take in as you sip on a steaming hot mug o’ joe. But if you want the full effect of this coffee I highly recommend pairing it with a richly flavored brunch dish, such as the organic salmon crepes I ordered at the café the other day.

The Birchwood Blend is a blend of dark and light roasts, with both brighter and heavier flavors present. This coffee will excite your taste buds yet doesn’t overwhelm them. We use a light roast version of our Colombian Paez coffee as the base, which lends a pleasant, sweet fruitiness to the cup. We add Sumatran for weight and earthiness and a splash of French roast to spice it up with dark chocolate notes.

Everyone has heard about pairing wines with food, but this practice is applicable to coffee. Play around with our different roasts, both the coffee and your meal will be enhanced. Personally I drink Ethiopian with a light breakfast, Birchwood with a heavier brunch and Sumatran Italian Roast with dessert after a heavy dinner.

Keep it fresh,
TJ
