Coffee Truffles the Fair Trade Way
Ingredients:
24 ounces bittersweet chocolate (we like Divine
Chocolate's 70% Dark)
1 cup heavy cream
1/2 cup strong brewed Peace Coffee
1/4 cup cocoa (Fair Trade if you can get it)
1 Tablespoon finely-ground Peace Coffee
3 Tablespoons butter
Real chocolate jimmies
Finely-ground pecans
Directions:
1. Line a 9- by 9-inch baking pan with waxed or parchment
paper. Important: Do not use foil or plastic wrap as the
chocolate will stick.

Melt the chocolate in a double boiler.

In another small pot, bring 1 cup heavy cream to a boil.

Prepare 1/2 cup strong brewed Peace Cofee.
5.
When cream boils and coffee is heated, pour both into the
melted chocolate.
6.
Add 3 Tablespoons butter and stir until smooth.
7.
Pour the chocolate mixture into prepared pan and
refrigerate until firm -- at least three hours.
8.
Sift 1/4 cup cocoa together with 1 tablespoon
finely-ground Peace Coffee into a cake pan or shallow
bowl.
9.
Remove chocolate from refrigerator and turn out onto
ice-cold marble surface or very cold cookie sheet (put the
cookie sheet in the freezer for 15 minutes beforehand).
10.
Cut chocolate into cubes, then, working quickly, roll
cubes in the cocoa-coffee mixture. Alternatively, roll
them in chocolate jimmies or finely-ground pecans.
To
give as a Valentine's Day gift, place the truffles in
candy papers. Cover a plain brown box with brown kraft
paper, drawn or paint hearts on it and voilá, you've got
a beautiful homemade present for that someone special!
