Shortbread
These
scrumptious cookies go really well with Peace Coffee's new
Blue Ox Blend. Decorate them for the holidays with
sprinkles or chocolate or just eat them plain... yum!
1
cup salted butter (never margarine!) at room temperature
1/2 cup plus 2 tablespoons sugar
2 1/2 cups sifted all purpose flour
Cream
butter and sugar together, then add flour, mixing and
kneading with hands if necessary. Chill. (Dough can also
be frozen at this point for later use; wrap tightly in
plastic wrap and then place in freezer bag.)
Roll
out 1/3 to 1/2" thick and cut into fancy shapes. Bake
at 300 degrees for approximately 20 - 25 minutes, but
watch them carefully as they are baking as cookies should
not brown or change shape. Note: if using unsalted butter,
add 1/2 teaspoon salt.
