Coffee
Bars
A
tasty treat for coffee break or dessert.
Ingredients:
1 cup golden raisins
2/3 cup strong brewed Peace Coffee
1/2 tsp cinnamon
2/3 cup butter
1 cup sugar
2 eggs
1 1/2 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Glaze:
1 1/2 cups confectioner's sugar
brewed coffee
Directions:
Preheat oven to 350F degrees.
Combine
raisins, coffee and cinnamon in a small bowl and let stand
for a few minutes (while you're preparing the rest of
recipe).
In
a large bowl, cream shortening and sugar. Add eggs one at
a time, beating after each addition. In a separate bowl,
sift flour, baking powder, soda and salt and combine with
creamed mixture. Add in raisin mixture.
Spread
batter in greased 9x13 pan and bake for 20-25 minutes.
While
still warm, spread with coffee glaze, which is made by
adding enough coffee to 1 1/2 cups confectioner's sugar to
achieve a thin spreading consistency.
Cut
into bars when cool.
