Ham and Chicken Casserole
This
recipe is perfect for an Autumn supper. Try it over a bed
of rice — it's delicious!

cups cooked ham, cubed
1 cup cooked chicken, diced
3 large yams, parboiled
1 tablespoon cornstarch
1/4 cup brown sugar, firmly packed
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
11/2 teaspoons grated orange peel
2/3 cup orange juice
1 cup brewed Peace Coffee coffee
Parboil
yams until almost done. Peel, and slice lengthwise into
quarter. While yams are boiling, make sauce. Make paste of
cornstarch and 3 tablespoons orange juice. Mix until
smooth. In small saucepan, combine cornstarch, remaining
juice, coffee, orange rind, brown sugar, cloves, and
cinnamon. Cook over low heat, stirring constantly, until
sauce is thick and clear. Remove from heat. In a 2-quart
casserole, arrange yams, ham, and chicken, alternating the
ingredients evenly. Pour sauce over the mixture, making
sure that all the ingredients are covered. Bake casserole
at 350 degrees for 20-30 minutes. Serves 4
