When preparing the Wonderland Park Espresso, aim for a shot that has a 2:3 ratio of coffee grounds to shot with a brew time of 27 seconds. Using standard portafilter basket sizes, that means you will be using 18g grounds of coffee to yield a shot that weighs 27g or 20g of coffee to yield 30g of beverage. When honing in on the perfect ratio, adjust the grind to get the desired shot at the target time—if you're reaching the target weight too fast, use a finer grind; too slowly, make that grind a touch coarser.
If you don’t have a scale, get one—it will up your espresso game significantly! Until you do, fill your portafilter with grounds and shoot for the same brew time with a 2 oz. yield.
If you don’t have an espresso machine, you can still have a wonderful café au lait at home with the Wonderland Park Espresso. Brew the coffee in a French Press at a ratio of 4 tbsp./30g of coffee to one cup/250g water, steep normally, and then mix the coffee with equal parts warm, whipped milk (or your favorite milk substitute).
Pairs equally wonderfully with a pain au chocolat, a fresh fruit plate, eggs benedict, or whatever other decadent brunch you happen to be planning for the weekend. Happy brewing.
